Guavanero Sauce
Ingredients
- 1 1/2 cups Monin Guava Puree
- 2-4 habaneros (depending on spice level), small diced
- 1 Fresno, small diced
- 1 yellow onion, small diced
- 1 cup vegetable oil, divided
- 2 tsp. ginger, minced
- 2 tsp. garlic, minced
- 1/2 cup rice wine vinegar
- 1/4 cup rum
- Salt, to taste
- Cayenne pepper, to taste

Instructions
- Set a sauce pot to medium – high heat and add in 1/4 cup of vegetable oil, heating until shimmering.
- Add in the habaneros, Fresno, and onion, cooking until softened (about 3-4 minutes).
- Add in the ginger and garlic, cooking for an additional minute.
- Add in the puree, rice wine vinegar, and rum and bring to a simmer.
- Continue to simmer until reduced by 1/3 (about 5 - 7 minutes), stirring occasionally.
- Once reduced, remove from heat and transfer to a blender.
- Blend the ingredients on high until smooth.
- Set the blender to medium speed and slowly drizzle in the remaining 3/4 cup of vegetable oil until fully incorporated.
- Taste for seasoning and transfer to a tightly sealed container and store in the refrigerator.
