Guavanero Sauce

Ingredients

  • 1 1/2 cups Monin Guava Puree
  • 2-4 habaneros (depending on spice level), small diced
  • 1 Fresno, small diced
  • 1 yellow onion, small diced
  • 1 cup vegetable oil, divided
  • 2 tsp. ginger, minced
  • 2 tsp. garlic, minced
  • 1/2 cup rice wine vinegar
  • 1/4 cup rum
  • Salt, to taste
  • Cayenne pepper, to taste

Glass Size: 3 cups.

Instructions

      1. Set a sauce pot to medium – high heat and add in 1/4 cup of vegetable oil, heating until shimmering.
      2. Add in the habaneros, Fresno, and onion, cooking until softened (about 3-4 minutes).
      3. Add in the ginger and garlic, cooking for an additional minute.
      4. Add in the puree, rice wine vinegar, and rum and bring to a simmer.
      5. Continue to simmer until reduced by 1/3 (about 5 - 7 minutes), stirring occasionally.
      6. Once reduced, remove from heat and transfer to a blender.
      7. Blend the ingredients on high until smooth.
      8. Set the blender to medium speed and slowly drizzle in the remaining 3/4 cup of vegetable oil until fully incorporated.
      9. Taste for seasoning and transfer to a tightly sealed container and store in the refrigerator.
