Guava Swirl Brioche Bread

Ingredients

  • 3 1/4 cups all-purpose flour
  • 3 Tbsp. sugar
  • 2 tsp. active dry yeast
  • 1 tsp. salt
  • 3 Tbsp. butter, melted
  • 3/4 cup water, lukewarm
  • 1/4 cup whole milk
  • 1 egg
  • 1 cup Monin Guava Puree

Glass Size: 1 loaf.

Instructions

      1. In the bowl of stand mixer, whisk together flour, sugar, yeast, and salt. In a separate bowl, combine butter, water, milk, and the egg and whisk to combine.
      2. Pour the wet into the dry and beat with a paddle attachment for 1 minute. Cover the bowl with plastic wrap or a wet towel and let rise in a warm spot for 1 and a half to 2 hours, until doubled.
      3. Once the dough has risen, scrape the sides of the bowl with a bench scraper then, working your way around the edges, fold the sides into the center until you have gone all the way around. Divide the dough in half then let rise another 20 minutes.
      4. Preheat oven to 375°F and grease a 9x5 inch loaf pan. Transfer one of the dough balls to a lightly floured work surface and roll into a 8x11 inch rectangle. Spread some of the guava puree from edge to edge then roll it up from the long end. Repeat with the second dough ball.
      5. Once both dough balls are rolled up, twist them from the start of one of the ends to create a spiral. Place the dough in the loaf pan and let rise uncovered for 20 minutes.
      6. Bake for 45 minutes or until the top is golden brown.
      7. Allow to cool. Serve immediately or store in a plastic bag at room temperature.
