Winter Citrus Curd

Instructions
- In a heatproof glass mixing bowl whisk together the sugar, eggs, egg yolks, winter citrus syrup and lime juice.
- Place the bowl over a pot of gently simmering water and heat, stirring occasionally, until the mixture has thickened and reached 160° F.
- Once thickened, remove from the heat and whisk in the butter until melted and fully incorporated. Season with salt as desired.
- Pour the mixture into a container, place plastic wrap directly on the surface of the curd and refrigerate for at least 4 hours – until the curd has fully set.
- Keep refrigerated until use.
