Spiced Sweet Potato Casserole
Ingredients
- 4 pounds sweet potatoes, peeled and small diced
- 1 1/2 sticks unsalted butter
- 5 oz sour cream
- 4 egg yolks
- 3/4 cup Monin Spiced Brown Sugar Syrup
- 2 tsp. salt
- 1 (10 oz) bag mini marshmallows

Instructions
- Preheat oven to 350 degrees Fahrenheit and bring a large pot of water to a boil.
- Lightly season water with salt and add the sweet potatoes, cooking until fork tender (about 10-12 minutes).
- While the sweet potatoes boil, add the butter to a nonstick skillet and heat over medium heat until the butter stops foaming and begins to brown.
- Strain butter through a fine mesh sieve and reserve.
- Once sweet potatoes are cooked, strain off water and allow to fully drain. Set aside 2 cups of the cooked sweet potatoes.
- Add remaining potatoes, browned butter, eggs, sour cream, salt, and syrup to a food processor and process until very smooth. Taste for seasoning.
- Spray a casserole dish with cooking oil and pour in the sweet potato puree. Top the casserole with the reserved sweet potatoes and marshmallows.
- Bake the casserole for 30 minutes before removing and allowing to cool for 10 minutes before serving.
