Spiced Sweet Potato Casserole

Ingredients

  • 4 pounds sweet potatoes, peeled and small diced
  • 1 1/2 sticks unsalted butter
  • 5 oz sour cream​
  • 4 egg yolks​
  • 3/4 cup Monin Spiced Brown Sugar Syrup
  • 2 tsp. salt​
  • 1 (10 oz) bag mini marshmallows​

Instructions

      1. Preheat oven to 350 degrees Fahrenheit and bring a large pot of water to a boil.​
      2. Lightly season water with salt and add the sweet potatoes, cooking until fork tender (about 10-12 minutes).​
      3. While the sweet potatoes boil, add the butter to a nonstick skillet and heat over medium heat until the butter stops foaming and begins to brown.​
      4. Strain butter through a fine mesh sieve and reserve.​
      5. Once sweet potatoes are cooked, strain off water and allow to fully drain. Set aside 2 cups of the cooked sweet potatoes.​
      6. Add remaining potatoes, browned butter, eggs, sour cream, salt, and syrup to a food processor and process until very smooth. Taste for seasoning.​
      7. Spray a casserole dish with cooking oil and pour in the sweet potato puree. Top the casserole with the reserved sweet potatoes and marshmallows.​
      8. Bake the casserole for 30 minutes before removing and allowing to cool for 10 minutes before serving.​
