Pea and Arugula Pesto with Mint
Ingredients
- 3 cups fresh English peas - blanched
- 2 oz. fresh arugula
- 4 pumps Monin Mint Concentrated Flavour
- 1/2 cup pistachios - toasted
- 1/2 cup Pecorino Romano cheese - shredded
- 3 Tbsp. fresh lemon juice
- 3/4 tsp. salt

Instructions

Combine all the ingredients in a food processor and process until the mixture comes to a smooth consistency. Serve chilled or at room temperature on a toasted bread or cucumber slices.
