Blueberry Jalapeño Bacon Jam

Ingredients

  • 1 lb. bacon, sliced into lardons
  • 1/2 cup sweet onion, small diced
  • 2 jalapenos, small diced
  • 1/2 cup water
  • 1/4 cup brown sugar
  • 1/4 cup Monin Blueberry Purée

Instructions

      1. In a sauté pan over medium-low heat cook the bacon until crispy, about 20 minutes.
      2. Remove the bacon from the pan and strain, reserving 2 tablespoons of the bacon fat.
      3. Return the reserved bacon fat to the pan, along with the onions and jalapenos, and sauté until translucent, about 10 minutes.
      4. When the onions are soft and translucent, add the water and deglaze the pan. Add the brown sugar and continue to cook until the mixture has reduced by half.
      5. Remove the pan from the heat and stir in the bacon and purée.
      6. Pulse the mixture in a food processor a few time until desired texture is reached.
      7. Serve at room temperature, as desired, or place into a container, cover tightly and refrigerate until use.
