
Blueberry Jalapeño Bacon Jam
Ingredients
- 1 lb. bacon, sliced into lardons
- 1/2 cup sweet onion, small diced
- 2 jalapenos, small diced
- 1/2 cup water
- 1/4 cup brown sugar
- 1/4 cup Monin Blueberry Purée

Instructions
- In a sauté pan over medium-low heat cook the bacon until crispy, about 20 minutes.
- Remove the bacon from the pan and strain, reserving 2 tablespoons of the bacon fat.
- Return the reserved bacon fat to the pan, along with the onions and jalapenos, and sauté until translucent, about 10 minutes.
- When the onions are soft and translucent, add the water and deglaze the pan. Add the brown sugar and continue to cook until the mixture has reduced by half.
- Remove the pan from the heat and stir in the bacon and purée.
- Pulse the mixture in a food processor a few time until desired texture is reached.
- Serve at room temperature, as desired, or place into a container, cover tightly and refrigerate until use.
